Mango, Macadamia and Coconut Vegan Muffins

Ingredients
- 1 chia egg (1 Tbs chia seeds, 3 Tbs water)
- 2 tsp lime juice
- ¾ cup of Inside Out Coconut Milk
- 2 cups of wholemeal spelt flour
- 2 tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
- ½ cup coconut sugar
- ¼ cup coconut oil
- 1 tsp vanilla
- 1 cup of diced mango
- ½ cup chopped macadamias
- ½ cup coconut sugar for topping
- Coconut flakes for topping
Method
- Preheat your oven to 180°
- Combine lime and milk then set aside
- Put all dry ingredients except toppings in a bowl and combine
- Combine all wet ingredients and combine well, making sure your chai egg is mixed through
- Pour wet ingredients into dry and combine
- Fold through mango
- Spoon into muffin cases or grease tray and sprinkle with extra coconut sugar and coconut flakes
