Raw Vegan Caramel and Banana Cake

Emma aka @sunflowercitizen is back again with her delicious raw and vegan recipes! This month, we sent her a few of our new products to try and she used our Inside Out Unsweetened Cashew Milk in her Raw Vegan Caramel and Banana Cake and … WOW it looks AMAZING!

Recipe is below, ENJOY!

Ingredients

Base

  • 1 cup almonds
  • 1 cup coconut flakes
  • 1 cup goji berries
  • 1/4 cup rice malt

Banana Layer

Caramel Layer

Bliss Balls

  • 1/4 cup almond butter
  • 1/4 cup crunchy peanut butter
  • 1 tbsp cacao
  • 2 tbsp coconut sugar

Cacao Nice Cream Drizzle

  • 1 banana
  • 1 tbsp drinking chocolate (Emma recommends Loving Earth dark cacao)
  • 1 tbsp coconut sugar
  • 1 tsp vanilla essence

 

Method

Step 1: The Base

    1. Using a blender, blitz the almonds into small pieces. Afterwards, add the rest of the ingredients and blend until they are all stuck together.
    2. Press this mixture into the bottom of a cake tin and place this into the freezer while you make the rest of the cake.

Step 2: Banana Layer

    1. Wash out your blender, then add all the ingredients and blend until smooth.
    2. Take out the base and carefully pour mixture onto the top of it, smoothing it out with a spoon or knife.
    3. Place the tin back into the freezer while you continue cooking.

Step 3: Caramel Layer

    1. Wash out your blender again, then add all the ingredients and blend until smooth.
    2. Take out the base and carefully pour mixture onto the top of it as well. Ensure it’s even and smooth.
    3. Place back in fridge and leave it in there overnight.

Step 4: Bliss Balls

    1. In a bowl, mix all the ingredients until it’s together smooth.
    2. Roll into small balls* (or whatever size you prefer).
    3. Place your bliss balls onto a tray and leave in freezer overnight.
    4. (*I made more than I needed, but that’s okay because these make an AMAZING snack!)

Step 4: Cacao Nice Cream Drizzle

    1. Just before you take out your cake and bliss balls, blend up all the nice cream ingredients until it’s smooth.
    2. Feel free to add more sweetener if you so desire.

Step 5: Assemble!

    1. Take out your cake and bliss balls, which should both now be hard and set. Decorate your cake with the balls.
    2. Drizzle the cacao nice cream over the cake.
    3. Place back in freezer for about an hour or two to set.
