Signature Paleo Pancakes
Healthy and delicious pancakes, perfect for those wanting a nutritious alternative to the not-so-healthy classic. Packed with protein to keep you going all day, free of gluten, dairy and refined sugar and super easy to make!
Ingredients
- 1 cup of almond meal
- 3 eggs
- 1 mashed banana
- Pinch of cinnamon
- 1 cup Inside Out Almond Coconut Blend for a delicious creaminess (or swap for the Organic Cacao for a chocolatey twist!)
- Blueberries (optional)
- Coconut oil to cook
- Toppings: Fresh berries, pure maple syrup, cacao nips, nuts…whatever you like!
Method
- Mix together the almond meal and cinnamon, then add your Inside Out milk of choice and the mashed banana.
- Mix until well combined. Heat a tablespoon of coconut oil in a pan over low-medium heat, dot each pancake with a couple of blueberries (optional) and wait a minute or two for it to cook before flipping. Cook until golden brown.
- Top with your favourite combination of fresh berries, maple syrup and whatever else takes your fancy.
- Serve with your favourite Inside Out Cold Brew Coffee Original… what a way to start the day!
