Signature Paleo Pancakes

Healthy and delicious pancakes, perfect for those wanting a nutritious alternative to the not-so-healthy classic. Packed with protein to keep you going all day, free of gluten, dairy and refined sugar and super easy to make!

Ingredients

  • 1 cup of almond meal
  • 3 eggs
  • 1 mashed banana
  • Pinch of cinnamon
  • 1 cup  Inside Out Almond Coconut Blend for a delicious creaminess (or swap for the Organic Cacao for a chocolatey twist!)
  • Blueberries (optional)
  • Coconut oil to cook
  • Toppings: Fresh berries, pure maple syrup, cacao nips, nuts…whatever you like!


Method

  1. Mix together the almond meal and cinnamon, then add your Inside Out milk of choice and the mashed banana.
  2. Mix until well combined. Heat a tablespoon of coconut oil in a pan over low-medium heat, dot each pancake with a couple of blueberries (optional) and wait a minute or two for it to cook before flipping. Cook until golden brown.
  3. Top with your favourite combination of fresh berries, maple syrup and whatever else takes your fancy.
  4. Serve with your favourite Inside Out Cold Brew Coffee Original… what a way to start the day!
